Eric Aldis, The Ritz Carlton, New Orleans
Chef de Cuisine Eric Aldis began his career with The Ritz-Carlton, New Orleans as a First Cook and then progressed to Sous Chef under Chef Murphy. A native of Texas, Aldis began as the Chef de Partie for Houston's Four Seasons hotel, working under renowned Chef Tim Keating before arriving in New Orleans.
Over the last year, Aldis expanded his expertise by overseeing culinary operations for the Bellagio hotel in Las Vegas before returning to once more to New Orleans. Aldis considers his new job as the Chef de Cuisine at The Ritz-Carlton, New Orleans to be the chance of a lifetime since it requires that he work with and learn from the most infamous chefs of New Orleans to reproduce their signature dishes.
